An exceptional learning opportunity\u003cbr\u003eoccurred in this vintage in that the heat spike we received Labor Day\u003cbr\u003eweekend did something to the skins which facilitated the extraction of\u003cbr\u003ephenolics. Because of this, we saw an earlier evolution of phenolics\u003cbr\u003eoccurring in the fermentation and therefore our extended maceration needs\u003cbr\u003ewere diminished. For all intensive purposes, a combination of pumpovers,\u003cbr\u003epunchdowns and delestage are used, however the vintage dictates just how\u003cbr\u003emany or few we decide to impart. Free-run was drained overnight and press\u003cbr\u003ekept separate. Elevage was in 600L Demi-Muids for 20 months sur lie.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eVINTAGE NOTES\u003cbr\u003e2017 started off with abundant rains again until late Spring providing\u003cbr\u003edecent vigor. Mild conditions during flowering allowed for a beautiful set.\u003cbr\u003eThe summer months were fairly mild until Labor Day weekend when we\u003cbr\u003esaw a massive heat spell for days on end. Needless to say, we did see some\u003cbr\u003edesiccation as well as a change to the fruit and different measures were\u003cbr\u003etaken in the winery to deal with this.
